  • Our culinary philosophy is built on strong relationships with local farmers, butchers and artisans, ensuring that each ingredient is of the highest quality. From the rolling hills of Heuvelland to the waters of the North Sea, we select products that celebrate the rich bounty of our surroundings.

  • From Land & Farm – We partner with the Wintjens family for organic fruits, vegetables, and syrups, ensuring that every bite bursts with seasonal freshness. Our dairy products come from local producers, with cheeses matured in our own ageing cellar to reach their peak flavour.
  • From River & Sea – Inspired by the Maas River, we source ingredients from 50 kilometres upstream and downstream, capturing the best of the region. Our seafood is sustainably caught in the North Sea, delivered fresh daily from Yerseke and carefully prepared to highlight its natural elegance.
  • From Field & Pasture – We work with the finest artisanal butchers in Heuvelland who share our commitment to ethical, nose-to-tail craftsmanship. Our Blanc Bleu Belge beef, sourced from Kusters Butcher in Margraten, forms the foundation of our house-made sausages and dry-cured hams.
